Panzanella Salad
This recipe is the best salad for those who don’t likes salads, with its toast bread with olive oil and fresh tomatoes.
The taste of grilled pepper will bring a sweet touch to the dish .
You can grill the peppers yourself in the oven or BBQ, but if you run out of time, you can buy some at the grocery store too.
This recipe contains a lot of carbohydrates, so its better to eat it after exercising your favorite sport or before, It contains a lot of vitamin C and fiber.
Ingredients
- 600 ml cherry tomatoes
- 4 bread slices ciabatta or other slice
- 4 red pepper
- 75 ml olive oil
- 30 ml balsamic vinegar
- 1 red onion
- 60 ml chopped fresh parsley
- 30 ml basil
- 1 salt to taste
Instructions
- Heat the BROIL 500F oven and place the rack at the top of the oven
- Cut the peppers in half, removing the pulp
- Spread the peppers on a skin-side plate upwards and burn the skin for about 10 minutes in the oven
- Cook the bread in the toaster and brush with olive oil.
- Cut into small pieces of 1 inch x 1 inch and set aside
- Put the hot peppers in a glass jar to peel the skin for a few minutes and then remove it
- Cut the onion into thin slices, and the peppers into slices too
- Cut the tomatoes in half
- Cut basil and parsley into slices
- Mix all ingredients and add bread at the last minute
