Ingredients
  • 600 ml cherry tomatoes
  • 4 bread slices ciabatta or other slice
  • 4 red pepper
  • 75 ml olive oil
  • 30 ml balsamic vinegar
  • 1 red onion
  • 60 ml chopped fresh parsley
  • 30 ml basil
  • 1 salt to taste

Instructions

  • Heat the BROIL 500F oven and place the rack at the top of the oven
  • Cut the peppers in half, removing the pulp
  • Spread the peppers on a skin-side plate upwards and burn the skin for about 10 minutes in the oven
  • Cook the bread in the toaster and brush with olive oil.
  • Cut into small pieces of 1 inch x 1 inch and set aside
  • Put the hot peppers in a glass jar to peel the skin for a few minutes and then remove it
  • Cut the onion into thin slices, and the peppers into slices too
  • Cut the tomatoes in half
