
Zuccini and chocolate pancakes. I create this recipe for my son but its also a great gluten free breakfast and low carb for those who wants to loose weight this summer .


Zucchini and chocolate protein pancakes
Ingredients
- 125 ml almond flour
- 10 ml coconut flour
- 30 ml coconut sugar
- 2.5 ml baking powder
- 50 ml grated zucchini
- 3 egg
- 60 ml vegetable milk
- 30 ml dark chocolate chips
- 2 tbs collagen protein
Instructions
- In a bowl combine all your ingredients except zucchini and chocolate and mix until a homogeneous mixture. The dough should be thick and pourable.
- Allow the dough to rest for 10 minutes. Just before cooking, stir in the chocolate chips and zucchini
- Preheat a nonstick skillet over medium-low heat and add butter
- Pour small portions of the dough into the heated mold. Cover immediately and cook for 2-3 minutes or until edges are golden. Go back and repeat.
