Asparagus salad

Ingredients
  

  • 15 ml lemon
  • 15 ml dijon mustard
  • 30 ml tahini
  • 15 ml apple cider vinegar
  • 125 ml of sunflower oil
  • 2.5 ml salt
  • For the salad:
  • 450 g of asparagus
  • 1 small red onion
  • 125 ml mint

Instructions
 

  • In a small bowl or liquid measuring cup, mix the ingredients in the dressing and set aside.
    Peel the asparagus and slice them into 1-inch pieces.
    Blanch the asparagus: boil a medium saucepan of water; add the asparagus and cook for 1 minute until it is bright green.
    Drain the asparagus and go under cold water or under a bowl of ice water. Dry the asparagus and place in an average salad bowl.
