Using a small amount of coconut oil and paper towel, lightly grease a 9 "x 5" loaf pan to prevent bread from sticking.
Peel and place the bananas in a bowl and use a fork to crush them to a thick consistency. Add maple syrup, protein powder, vanilla extract and almond milk. Stir to combine. Make sure the protein powder is dissolved.
In larger bowl, mix remaining dry ingredients until well blended.
Add the wet banana mixture to the dry ingredients while mixing. Once well mixed, incorporate the blueberries.
Transfer the mixture to the bread pan and bake for 50 minutes. Check that the bread is well cooked using a toothpick or a knife in the center. A more gelatinous texture is normal; However, you do not want a flowing texture.
Let the banana bread cool before serving. Slice and enjoy!
