
Peanut soup
Ingredients
- 15 ml sesame oil
- 15 ml grated fresh ginger
- 15 ml chili paste
- 2 chopped green onions
- 875 ml chicken broth
- 75 ml creamy peanut butter
- 30 ml soy sauce or Braggs sauce
- 398 ml unsweetened coconut milk
- 500 ml bok choy
- 125 ml coriander or basil
- 75 ml chopped fresh mint
- .5 cup rice vermicelli
- 45 ml chopped peanuts
- 1 lime zest
Instructions
- Heat the oil in a large saucepan over medium heat
- Add ginger, chili paste and green onions. Bake 30 seconds to 1 minute
- Add peanut butter, soy sauce and coconut milk while mixing. about 10 minutes.
- Add the boy choy and cook until tender (3-4 minutes)
- Add the rice vermicelli following the instructions on the package.
- Once cooked, remove from heat and stir in coriander and mint. Pour the soup into bowls and add a large handful of rice vermicelli. Garnish with peanuts. Zest the green lime on each bowl.
